Watermelon, Feta and Spinach Salad

The freshness of watermelon paired with the saltiness of feta makes a winning combination.
Ingredients
1 cup crumbled feta cheese
1 tbspLemon Dilly Dip Mix
1⁄4 watermelon, cut into triangles
1⁄2 English cucumber, sliced into rounds
1⁄4 red onion, thinly sliced
1 cup pitted black olives – optional
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
8 cups baby spinach
1⁄2 head radicchio, thinly sliced – optional
1⁄4 - 1⁄3 cupGreek Dressing, or your choice
Preparation
- Toss feta with Lemon Dilly Dip Mix.
- In a large bowl, toss watermelon with cucumber, onion, olives, Sea Salt and Pepper. Add spinach and radicchio.
- Drizzle with prepared Dressing and toss to mix.
