Prep the meatloaf ahead of time to get this recipe ready in 10 min! Microwave or bake, chill, then slice.

1 tbsp water
8 slices bocconcini cheese, about 4 oz/120 g
2 tbsp olive oil
4 medium-sized panini buns or chopped baguette
- In 4-Cup Prep Bowl, stir sauce mix with water and let stand 5 min. Meanwhile, cut each slice of cheese in half. To bowl, add olive oil. Whisk vigorously. Add cheese; gently toss to coat.
- Slice buns open. Toast, if desired.
- Fill each bun with meatloaf and cheese. Drizzle with any remaining pesto sauce.
Bocconcini are small mozzarella cheese balls. They come in different sizes and are delicious in salads. For this recipe, look for pre-sliced bocconcini (sometimes called medallion slices).
For a warm sandwich, simply microwave prepared sandwich until warmed through. Alternatively, warm sliced meatloaf in a pan on the stovetop.
